Larabars are super good; if you’ve never had one I recommend going to your favorite supermarket right now (mine is Trader Joe’s), and trying one out for yourself. They are delicious and not heavily processed.
I found this recipe to make a homemade version of a Larabar in Chef AJ’s book Unprocessed. It is wonderfully easy to do. I decided to use only half of the measurements listed in the book’s recipe, except the same amount of vanilla. I did so because I didn’t want to make too much. I also used reduced sodium peanuts, instead of unsalted peanuts.
The great thing about this recipe is that you can get get all the ingredients from Trader Joe’s. The best deal for the dates is from Costco, although they’re maybe not as soft as the ones from Trader Joe’s or Whole Food’s – but a great price for what you get.
-1 cup of reduced sodium peanuts
-1/2 cup of pitted dates
-1/2 cup of unsweetened dried cherries
-1 tablespoon of vanilla
-Process the peanuts in the food processor into a fine powder.
-Add the dates and cherries. Continue to process until it starts to ball up.
-Add vanilla. Process some more until you’re able to smush it together into a ball — it gets sticky and delicious.
It was hard for us to form into perfect balls so we used a measuring cup (1/4 cup) to shape them.
